What about Chilaquiles?

Chilaquiles are a traditional Mexican breakfast dish with a rich history. The name “chilaquiles” comes from the Nahuatl word “chil-a-quilitl,” which means “herbs or vegetables in Chile.” This dish has its roots in Aztec culture, where leftover corn tortillas were used to create a hearty and flavourful meal. Originally, chilaquiles consisted of fried tortilla chips bathed in a simple chile sauce. Over time, additional ingredients such as cheese, crema, onion, and eggs were added to the dish. Today, chilaquiles can be found in a variety of variations, reflecting the regional diversity of Mexican cuisine.
